🍋 Lemon Sugar Cookies
Ingredients

2 ¾ cups all-purpose flour

1 tsp baking soda

½ tsp baking powder

½ tsp salt
-
1 cup unsalted butter, softened

1 ½ cups granulated sugar
-
1 large egg
-
1 tsp vanilla extract
-
1 tbsp lemon zest
-
2 tbsp fresh lemon juice
-
Optional: 1–2 drops yellow food coloring
-
Extra granulated sugar for rolling
Instructions
1. Prepare the Dough

Preheat oven to 350°F (175°C).

In a bowl, whisk together:

flour
-
baking soda
-
baking powder
-
salt
-

In another large bowl, cream butter + sugar until light and fluffy (2–3 minutes).

Add:

egg
-
vanilla
-
lemon zest
-
lemon juice
Mix until combined.

Gradually add dry ingredients into the wet.

Chill dough for 20–30 minutes for easy rolling.
2. Shape the Cookies

Roll dough into 1–1½ inch balls.

Roll each ball in sugar.

Place on baking sheet lined with parchment, leaving space to spread.
3. Bake

Bake 8–10 minutes, until edges are just set and centers look slightly soft.

Do not overbake! The cookies firm up as they cool.
4. Cool
Let cool on the baking sheet for 3 minutes, then transfer to a rack.
⭐ Optional Lemon Glaze (For Extra Pop!)
Mix:

1 cup powdered sugar
-
1–2 tbsp lemon juice
-
½ tsp lemon zest
Drizzle over cooled cookies.
