Roasted Chicken & Veggie Comfort Bowl
A warm, colorful, and nutritious plate inspired by your image! This dish features golden roasted potatoes, juicy seasoned chicken, lightly caramelized broccoli, fresh cherry tomatoes, and crisp carrot slices — simple, clean, and delicious.
Ingredients
For the Roasted Potatoes
3–4 medium potatoes, cut into wedges
2 tbsp olive oil
1 tsp paprika
1 tsp dried oregano
Salt & pepper to taste
For the Chicken
1 chicken thigh or breast, sliced
1 tbsp olive oil
1 tsp smoked paprika
½ tsp garlic powder
½ tsp dried thyme
Salt & pepper to taste
For the Veggies
1 cup broccoli florets
1 tbsp olive oil
Pinch of salt
Fresh Add-ons
1 carrot, sliced
6–8 cherry tomatoes, halved
Directions
Roast the Potatoes
Preheat oven to 200°C (400°F).
Toss potatoes with olive oil, paprika, oregano, salt, and pepper.
Spread on a baking tray and roast for 25–30 minutes, flipping halfway, until golden and crispy.
Cook the Chicken
Season chicken with olive oil, paprika, garlic powder, thyme, salt, and pepper.
Pan-sear on medium heat for 5–7 minutes per side until cooked and slightly browned.
Prepare the Broccoli
Heat olive oil in a pan.
Add broccoli with a pinch of salt and sauté for 4–5 minutes until lightly caramelized but still bright green.
Assemble Your Plate
Arrange roasted potatoes, grilled chicken, sautéed broccoli, sliced carrots, and cherry tomatoes beautifully on the plate.
Serve warm!
