🥘 Smother-Style Pork Chops
Ingredients
For the Pork Chops

4 bone-in pork chops (about ¾–1 inch thick)

1 tsp salt
-
1 tsp black pepper
-
1 tsp garlic powder
-
1 tsp onion powder
-
½ tsp paprika
-
2–3 tbsp flour (for dusting)

2–3 tbsp oil or butter for searing
For the Gravy
-
1 large onion, thinly sliced
-
2 cloves garlic, minced
-
2 tbsp flour
-
2 cups chicken broth
-
½ cup heavy cream (or ½ cup milk for lighter gravy)
-
1 tsp Worcestershire sauce (optional)
-
½ tsp dried thyme
-
Salt & pepper to taste
Instructions
1. Season & coat the pork chops

Mix salt, pepper, garlic powder, onion powder, and paprika.

Season both sides of the pork chops.

Lightly dust the chops with flour (helps form a crust and thickens gravy later).
2. Sear the pork chops

Heat oil/butter in a large skillet over medium-high heat.

Sear pork chops 3–4 minutes per side until nicely browned (they don’t need to be fully cooked).

Remove chops and set aside.
3. Make the onion gravy

Add sliced onions to the same skillet; sauté 5–7 minutes until soft and golden.

Add garlic and cook 1 minute.

Sprinkle flour over onions and stir for 1–2 minutes.

Slowly pour in chicken broth, stirring until smooth.

Add cream, Worcestershire (optional), thyme, and salt/pepper.

Bring to a gentle simmer.
4. Smother the chops

Return pork chops to the skillet, nestling them into the gravy.

Cover with a lid and simmer on low for 25–30 minutes, or until chops are tender.

Taste gravy and adjust seasoning
