📝 Ingredients (4 servings)

1 medium cauliflower, cut into florets

1 medium onion, chopped

2 cloves garlic, minced

2 carrots, sliced
-
1 potato (optional for extra creaminess)

1 celery stalk, chopped (optional)

1 tbsp olive oil

1 liter (4 cups) vegetable broth

½ cup milk, plant milk, or 2 tbsp Greek yogurt

Salt and pepper to taste

½ tsp turmeric (optional, for color)

½ tsp thyme or oregano
-
Fresh parsley for garnish
🍳 Instructions

Sauté the base
Heat olive oil in a pot. Add onion and garlic. Cook until soft and fragrant (3–4 minutes). -
Add vegetables
Stir in carrots, celery, cauliflower, and potato. Cook 5 minutes. -
Add spices + broth
Add turmeric, thyme, salt, and pepper. Pour in the vegetable broth. -
Simmer
Bring to a boil, then reduce heat.
Simmer 15–20 minutes, until all vegetables are soft. -
Blend
Use an immersion blender (or a regular blender in batches) to purée until creamy. -
Add creaminess
Stir in milk or Greek yogurt.
Heat gently (do not boil if using yogurt). -
Taste & serve
Adjust seasoning. Top with parsley.
