🥣 Indian Pudding (Traditional New England Style)

Ingredients (serves 6)

  • 4 cups milk (whole or 2%)

  • ½ cup yellow cornmeal

  • ¼ cup molasses

  • ⅓ cup brown sugar

  • 3 tbsp butter

  • 1 tsp vanilla extract

  • 1 tsp ground cinnamon

  • ½ tsp ground ginger

  • ¼ tsp nutmeg

  • ¼ tsp salt

  • Optional: ½ cup raisins

  • Optional topping: vanilla ice cream or whipped cream

🍳 Instructions

1. Preheat oven

Preheat your oven to 300°F (150°C).
Butter a 1.5–2-quart baking dish.

2. Heat the milk

In a large pot, heat 3½ cups of the milk until it just starts to steam (don’t boil).

3. Add cornmeal

Slowly whisk in the cornmeal so it doesn’t clump.
Cook over low heat for 5–7 minutes until it thickens slightly.

4. Add sweeteners & spices

Stir in:

  • Molasses

  • Brown sugar

  • Butter

  • Vanilla

  • Spices and salt
    Add raisins now if using.

  • Mix well.

5. Bake low and slow

Pour the mixture into the prepared baking dish.
Bake for 2–2½ hours, stirring once halfway through.

6. Adjust consistency

If it gets too thick while baking, stir in the remaining ½ cup milk during the last 30 minutes.

7. Serve warm

Best enjoyed warm with a scoop of vanilla ice cream on top
