🧀 Cheesy Stuffed Meatloaf

This hearty and flavorful meatloaf is a delicious twist on the classic. The addition of Provolone and mozzarella creates a gooey, cheesy center that will delight both kids and adults alike.

Ingredients

For the Meatloaf

  • 2 lbs ground beef (or 1 lb beef + 1 lb ground pork for extra flavor)

  • 1 cup breadcrumbs

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • ½ cup milk

  • 2 large eggs

  • 2 tsp Worcestershire sauce

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp smoked paprika (optional)

For the Cheese Filling

  • 4 slices Provolone cheese

  • 1 cup shredded mozzarella cheese

For the Glaze (optional)

  • ½ cup ketchup

  • 2 tbsp brown sugar

  • 1 tsp Dijon mustard

🥩 Instructions

1. Preheat and prepare

  1. Preheat oven to 375°F (190°C).

  2. Line a baking sheet with parchment paper or lightly grease a loaf pan.

2. Make the meat mixture

  1. In a large bowl, combine ground meat, breadcrumbs, onion, garlic, milk, eggs, Worcestershire sauce, salt, pepper, and paprika.

  2. Mix gently until just combined — avoid overmixing to keep meatloaf tender.

3. Form the meatloaf and add cheese

  1. On a sheet of parchment, shape half of the meat mixture into a rectangle (about 9×5 inches).

  2. Layer Provolone slices and shredded mozzarella in the center.

  3. Top with the remaining meat mixture and gently seal the edges around the cheese.

4. Add glaze

  1. In a small bowl, mix ketchup, brown sugar, and Dijon mustard.

  2. Spread glaze evenly over the top of the meatloaf.

5. Bake

  1. Bake for 55–65 minutes, or until the internal temperature reaches 160°F (71°C).

  2. Let rest for 10 minutes before slicing — this helps the cheese stay gooey inside.

6. Serve

Slice and serve with mashed potatoes, roasted vegetables, or a simple salad.

  • Make-ahead: Assemble meatloaf a day ahead and refrigerate; bake when ready.
