🥐 Spinach & Cheese Puff Pastry Squares

Ingredients

  • 1 sheet puff pastry, thawed

  • 1 tbsp olive oil or butter

  • 2 cups fresh spinach, chopped
    (or 1 cup frozen spinach, thawed and squeezed dry)

  • 1 clove garlic, minced

  • ½ cup ricotta cheese

  • ½ cup shredded mozzarella

  • ¼ cup grated Parmesan

  • 1 large egg (for egg wash)

  • Salt & pepper to taste

  • Optional: pinch of red pepper flakes, dried oregano

🥐 Instructions

1. Prep the pastry

  1. Preheat oven to 400°F (200°C).

  2. Line a baking sheet with parchment paper.

  3. Unfold puff pastry and cut into 9 squares (3×3 grid).

2. Make the filling

  1. In a skillet, heat olive oil/butter.

  2. Add garlic and sauté for 30 seconds.

  3. Add spinach and cook until wilted (or warmed through if using frozen).

  4. Transfer to a bowl.

  5. Stir in ricotta, mozzarella, Parmesan, salt, pepper, and any optional seasonings.

  6. Mix until creamy.

3. Assemble

  1. Place a spoonful of spinach filling in the center of each puff pastry square.

  2. Fold corners just slightly inward (or leave open-faced).

  3. Beat egg and brush edges lightly with egg wash for golden color.

4. Bake

  • Bake for 15–18 minutes or until the pastry is puffed and golden brown.

5. Serve

Serve warm or at room temperature.
Amazing with marinara, ranch, or a garlic-herb dipping sauce.
