🥐 Spinach & Cheese Puff Pastry Squares
⭐ Ingredients

1 sheet puff pastry, thawed

1 tbsp olive oil or butter

2 cups fresh spinach, chopped
(or 1 cup frozen spinach, thawed and squeezed dry) -
1 clove garlic, minced
-
½ cup ricotta cheese
-
½ cup shredded mozzarella
-
¼ cup grated Parmesan
-
1 large egg (for egg wash)
-
Salt & pepper to taste
-
Optional: pinch of red pepper flakes, dried oregano
🥐 Instructions
1. Prep the pastry

Preheat oven to 400°F (200°C).

Line a baking sheet with parchment paper.

Unfold puff pastry and cut into 9 squares (3×3 grid).
2. Make the filling

In a skillet, heat olive oil/butter.

Add garlic and sauté for 30 seconds.
-
Add spinach and cook until wilted (or warmed through if using frozen).

Transfer to a bowl.
-
Stir in ricotta, mozzarella, Parmesan, salt, pepper, and any optional seasonings.

Mix until creamy.
3. Assemble

Place a spoonful of spinach filling in the center of each puff pastry square.

Fold corners just slightly inward (or leave open-faced).

Beat egg and brush edges lightly with egg wash for golden color.
4. Bake

Bake for 15–18 minutes or until the pastry is puffed and golden brown.
5. Serve
Serve warm or at room temperature.
Amazing with marinara, ranch, or a garlic-herb dipping sauce.
