Chocolate Cherry Yule Log Cake | Soft, Creamy & Show-Stopping for the Holidays 

This oneβs a true holiday centerpiece β rich chocolate sponge rolled with whipped cream and topped with bright cherries and swirls of frosting. Every slice is a little celebration! 
Ingredients:
For the Chocolate Sponge Cake:
4 large eggs
Β½ cup granulated sugar
1 tsp vanilla extract

cup all-purpose flour
ΒΌ cup cocoa powder
Β½ tsp baking powder
Pinch of salt
For the Filling:
1 cup heavy cream
2 tbsp powdered sugar
Β½ tsp vanilla extract
Topping:
Whipped cream (for decorating)
Cherries (fresh or jarred)
Optional: chocolate shavings or drizzle
Instructions:
Preheat oven to 350Β°F and line a 10×15β jelly roll pan with parchment.
Whip eggs and sugar with a hand mixer for 5β6 minutes, until thick and pale. Mix in vanilla.
Sift flour, cocoa, baking powder, and salt and gently fold into egg mixture. Donβt overmix!
Pour into pan and spread evenly. Bake for 10β12 minutes, or until sponge springs back when touched.
Roll cake immediately: While warm, invert onto a kitchen towel dusted with powdered sugar. Peel off parchment, roll up gently with the towel, and let cool.
Whip cream, sugar, and vanilla until stiff peaks form. Unroll cooled cake and spread filling evenly.
Roll back up and place seam-side down on a platter. Frost with whipped cream, decorate with cherries and drizzle with melted chocolate or curls.
