🥩 Easy & Delicious Steak Fajitas

Ingredients

🥩 For the Steak & Marinade:

  • 1 ½ lbs (680 g) flank steak or skirt steak

  • 3 tbsp olive oil

  • 2 tbsp lime juice (fresh)

  • 2 cloves garlic, minced

  • 1 tsp chili powder

  • 1 tsp paprika

  • 1 tsp ground cumin

  • ½ tsp oregano

  • ½ tsp salt

  • ¼ tsp black pepper

  • Optional: a pinch of red pepper flakes for heat

🌶 For the Vegetables:

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 large onion, sliced

  • 1 tbsp olive oil

  • Salt and pepper to taste

🌮 For Serving:

  • Flour or corn tortillas, warmed

  • Fresh lime wedges

  • Optional toppings: sour cream, salsa, guacamole, cheese, cilantro

Instructions

1. Marinate the Steak

  1. In a bowl, whisk together olive oil, lime juice, garlic, and all the seasonings.

  2. Place steak in a resealable bag or shallow dish, pour the marinade over, and coat well.

  3. Marinate for at least 30 minutes (up to 8 hours in the fridge for best flavor).

  4. Let steak sit at room temperature for 15 minutes before cooking.

2. Cook the Steak

Option 1 – Grill:

  • Preheat grill to medium-high.

  • Grill steak for 4–5 minutes per side, depending on thickness, until medium-rare or desired doneness.

  • Let rest for 5–10 minutes, then slice thinly against the grain.

Option 2 – Skillet (Indoor method):

  • Heat a large cast-iron skillet over high heat.

  • Add a bit of oil and sear steak for 3–5 minutes per side.

  • Remove and rest before slicing.

3. Cook the Veggies

  1. In the same skillet (with a drizzle of oil if needed), add the bell peppers and onion.

  2. Sauté over medium-high heat for 5–7 minutes, until softened and slightly charred.

  3. Season lightly with salt and pepper.

4. Assemble the Fajitas

  1. Add the sliced steak back to the skillet with the peppers and toss together (optional).

  2. Serve immediately with warm tortillas and your favorite toppings.
