GARLIC HERB GRILLED LOBSTER
INGREDIENTS
- 4 lobster tails (about 6 ounces each)
- 1/4 cup unsalted butter, melted
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh parsley, finely chopped
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- 1/2 teaspoon smoked paprika
- Juice of 1/2 lemon
- Salt and black pepper, to taste
- Lemon wedges, for serving
Instructions
1. Prepare the Lobster Tails:
Using kitchen shears, cut the top shell of each lobster tail lengthwise down the center, stopping at the tail fin.
Gently pull the meat up through the shell, keeping it attached at the base, and rest it on top of the shell (this is called “butterflying”).
2. Make the Garlic Herb Butter:
In a small bowl, whisk together the melted butter, olive oil, minced garlic, parsley, thyme, rosemary, smoked paprika, lemon juice, salt, and black pepper.
3. Preheat the Grill:
Preheat your grill to medium-high heat (about 400°F / 200°C). Lightly oil the grates to prevent sticking.
4. Brush and Grill:
Brush the garlic herb butter generously over the lobster meat.
Place the lobster tails flesh-side down on the grill. Cook for about 2–3 minutes to get a good sear.
Flip the tails shell-side down, brush again with more butter, and grill for another 5–6 minutes, or until the lobster meat is opaque and slightly firm (internal temp should reach 140–145°F / 60–63°C).
5. Serve:
Remove from the grill, drizzle with any remaining garlic herb butter, and serve hot with lemon wedges.
