14 oz chicken tenders (6–8 pieces)

Salt & pepper to season

2 tbsp cooking oil (vegetable or similar)

2 large French-style sub rolls (~10 inches each)

2 large shallots, thinly sliced

1½ cups shredded Monterey Jack cheese (fresh)

½ cup tangy white sauce (plus extra for drizzling)

Make the White Sauce:

In a medium bowl, combine mayo, vinegar, horseradish, lemon juice, mustard, garlic, sugar, pepper, paprika, and salt.

Whisk until smooth and creamy.

Chill in fridge while preparing the rest.

Cook the Chicken & Shallots:

Heat oil in a large skillet over medium-high heat.

Season chicken with salt and pepper on both sides.

Sear chicken for about 4 minutes on one side, flip, then cook 3 more minutes until done.

Add shallots during the second side; stir occasionally until tender and lightly browned.

Chop & Mix:

Let chicken cool slightly, then cut into bite-sized chunks.

In a bowl, mix chicken, shallots, 1 cup Monterey Jack cheese, and ½ cup white sauce. Stir until well combined.

Stuff & Broil:

Preheat broiler.

Slice sub rolls lengthwise (leave a hinge) and lay open on a baking sheet.

Fill rolls generously with the chicken mixture.

Top each sub with remaining ½ cup cheese.

Broil & Serve:

Broil for 2–3 minutes, watching carefully, until cheese is melted and bubbly.

Drizzle extra white sauce on top.

Slice each sub in half to create 4 portions. Serve hot with more sauce on the side.
